We lived in Texas for 5 years and loved it there. Or, if I'm being totally honest, I loved the people, Tex-Mex, barbecue, live oak trees, winter, and HEB. Fire ants and summer made Texas slightly less awesome. In the rural part of TX where we lived (outside San Antonio) if your car was stopped by the side of the road, someone would always stop to see if they could help. Once I had a flat tire and a truck full of non-English-speaking men hopped out of their work truck and changed my tire. I don't think this would happen in the East where we currently live. I hope you end up enjoying TX as much as we did. Thanks for the back-story!
When we lived there, HEB made flour tortillas fresh, right there in the store. It was heaven. We became so spoiled by these fresh tortillas that we can no longer buy packaged tortillas that are undoubtedly full of preservatives. We make our own from scratch which is somewhat burdensome but worth it!
I always look forward to these posts. I savor them over my morning coffee in the morning in the hour before the kids get up, stopping to ponder, and wouldn't think of ending my subscription. I used to live in California, in San Diego, and at a certain point realized that I wasn't neccesarily unhappy but wasn't moving forward either. Same weather, muted seasons allowing the years to blend into each other, with myself aging and no closer to my life goals than five years before when I arrived. I moved away, shifted my career and watched it skyrocket, met and married my husband, bought a house and started a family all in the next five years. Many of my friends left too and saw similar trajectories. Best of luck to you.
Also, not too proud to leave this for others who may need it:
